Tender, juicy and super-easy, this is a perfect quick mid-week dinner. Life feels very busy at the moment. Whether it’s for parents having to juggle work and kids over the holidays, or those in the tourism industry gearing up for Chinese New Year, or those like many, just always on the go, this is the recipe for you!
In just 15 minutes, this tasty Chinese dish can be on your table. The two very common aromatics used in this recipe are ginger and spring onion, which give the beef a beautiful subtle fragrance. The crucial part of a stir fry (other than the flavour) is the heat of the pan, so make sure it’s smoking hot before throwing in your protein.

SERVES: 4 people
600-700g tender beef (I used fillet but you could use ribeye or flank)
1 thumb-size fresh ginger
1 tablespoon sesame oil
4 tablespoons soya sauce
3 cloves garlic, crushed
1 teaspoon shao xing cooking wine
2 teaspoons cornflour
1/2 teaspoon caster sugar
2 tablespoons chilli oil (optional but delicious)
3 spring onions
2 tablespoons toasted sesame seeds
1/4 cup water (or beef stock if you prefer a little saltier)
2 cups cooked browned rice
1.Slice the beef thinly against the grain. Thinly julienne the ginger (or grate). Combine all the ingredients for the beef marinade in a bowl, including the beef, and thoroughly combine. Set aside for 10-15 minutes.
2.Chop off the top of your spring onion and chop into 4cm segments. Quarter each segment long-ways and set aside.
3.Heat a wok or large pan with a few glugs of vegetable oil to a high heat. Tip in the beef and spread evenly across pan and let it sear until golden brown.
4.Turn the beef and let it sear again. It shouldn’t need more than 1-2 minutes each side. Next add in the spring onions and water (or stock if using) and thoroughly combine. This will absorb quickly, and once two-thirds has, it is ready.
5.Pour the beef into a serving bowl and sprinkle generously with the toasted sesame seeds.
6.Serve immediately with some Asian greens and the brown rice.
NB:If you want to make this go a little further, just add more meat and a little more of all the ingredients. It’s that simple.
