Pub grub hub opening

Co-owners Cordelia and Mike Burgess (right) and chef Joff Bertram stand in their new central Queenstown gastro pub inspired by a Victorian-era pawn shop/emporium.

The Ballarat Trading Co – named after The Mall’s predecessor, Ballarat Street – opens tomorrow in the former National Bank premises.

The Burgesses and a North Island couple also own Winnies restaurant/nightclub above, which they bought nine years ago.

The new pub incorporates 150-year-old Baltic pine, handmade Lokta ceiling paper, a stock board back wall, a 10-metre marble bar and an alpine hunting-themed dining room. Bertram, who’s worked in local restaurants including Amisfield and Bathhouse, says they aim to raise the bar on pub food.
